Homemade Granola


My Dad loved Granola and it was a staple for him. I grew up eating it and still love it today. I know that there are so many different variations so feel free to add or take away items. In the past few years the importance of the fiber and eating healthy has become more important to me so this granola starts my day off right.

Homemade Granola

8 Cups Old Fashioned Oats
1 Cup Wheat Germ or Flax Seed
1 Cup Walnuts or Almonds - Chopped (Optional)
1 Cup Brown Sugar
1 Tsp. Salt
2/3 Cup Oil
1 Tsp. Cinnamon
1 Cup Honey
4 Tbl. Vanilla
1 Cup Dried Sweetened cranberries, cherries, raisins, or pineapple.

In a large Bowl stir together the oats, wheat germ, nuts, brown sugar, cinnamon and salt. Mix well. In a small sauce pan bring Oil, Honey, and vanilla to a boil and boil for 1 minute. Pour over dry ingredients and toss the mixture until it is well combined. Spread on two seperate parchment paper lined cookie sheet with high sides . Bake at 300 degrees until golden brown or about 40 min. Stir this mixture every 10 min or so to keep it from sticking.  Let it cool completely and Store in an air tight container for up to 4 weeks. Enjoy!
