Pecan Brittle




Pecan Brittle

Cook:
2 C. sugar
1/4 C.Water
1 C. White Syrup

1 Tsp. Vanilla
2 tsp. Soda
3 Tbl. Butter
2 1/2 Cup Pecans coarsely Chopped

Cook in a 3 qt. Saucepan. Stir until sugar dissolves. Cook until 285 degrees. Remove from heat and add 2 1/2 cups of pecans and 3 tbl. Butter. Cook again until 295 degrees. Remove from heat and add 2 Tsp. Soda and 1 Tsp of Vanilla and stir fast as mixture will foam. Pour out on a buttered pan. Spread out as thin as possible. When cold break in pieces. Makes 2 lbs. of candy
