There is no doubt that I am a lover of soups of all kinds and natures. I could seriously eat soup everyday and never get tired of it. I think it has something to do with the fact that while I was growing up we didn't always have a lot to eat and often we would have soup. Lets face it, I don't crave that kind of soup that was the clean out the fridge type, but a step above. My kids have always liked their veggies and broccoli is one of their favorites and mine, so it only natural that this soup makes the cut to the blog. This recipe is so simple and very good.
Broccoli Cheese Soup
5 Potatoes - Peeled and cubed
1/2 Med. Onion, chopped
2 Tbl. Butter
1 1/2 Lb. Frozen Broccoli Florets
2 Large Cans Chicken Broth
2 Carrots - Sliced
1 Can Cream of Chicken
1 Cup Milk
2 Cups Shredded Cheddar Cheese
6 Slices of Bacon, Crumbled
Salt and Pepper to taste
In a small fry pan, combine butter and chopped onions. Fry until the onions become translucent and browned slightly. In a large stock pot combine potatoes, broccoli, broth, carrots, and cream of chicken, Bring to a boil. You will need add more water or broth as you boil the soup. Boil until the vegetables are soft and then add the milk and cheese. Salt and pepper to taste. Garnish with bacon. Serve Hot! ENJOY
