Fried Pies

A southern tradition, Fried pies are part of every childhood memory it seems. I didn't grow up in the south, but have found them to be quite delicious. I would love to carry on the tradition of my children talking about how they ate fried pies.

Fried Pies

2 Tsp. Shortening
1 C. Flour
1 Egg - yolk only
3 Tb.. Hot Milk
1/8 Tsp. Salt
1 to 1 1/2 C. Fruit Filling

In am mixing bowl, cut shortening into flour. Add eggs, milk and salt. Mix well. Knead well to make dough smooth. Roll dough 1/8 inch thick. Cut into rounds. Cover 1/2 of each circle with fruit filling. Leave 1/4 edge for crimping. Fold circles over and pinch edges together or press with a fork. Fry pies in a fryer. Makes 6-8 pies. ENJOY!
