Mexican Chicken Chili


This recipe is so yummy on a cold winters night. It my favorite ~ Enjoy!! (Sorry about the blurry Photo.. Obviously, I was in a rush to eat!)

Mexican Chicken Chili

1 Zucchini, shredded (optional)
1 Can Black Beans
1 Can Chili Beans
1 Can Corn (Frozen will work Also)
2 Cans Chicken Broth
1 Jar Salsa - Mild
2 Large Cans of White Chicken or 2 medium chicken breast boiled & Shredded
1 Clove Garlic - Minced
1 1/2 Tb. Chili Powder
1 Tsp. Cumin

Combine all ingredients in a crock pot and let simmer for several hours until flavors have had ample time to combine. When Serving top with Cheese, sour cream, green onion, tortilla chips and a touch of cilantro if desired. ENJOY!

  2. yummm. One of my fav soups of all time. Can't wait until it gets cool enough for some fall/winter food.
