My hubby's favorite...Enough Said!
Mexican Cornbread
1 Cup Self Rising Cornmeal
1/2 Tsp. Baking Soda
1/2 Tsp. Salt
1/2 Tsp Sugar
3 Eggs, Beaten
1 Cup Milk
3 Jalapeno Peppers, Chopped or 20 Pepper Rings
1/2 Cup Chopped Onions
1 1/2 Cup Shredded Cheese
1 Tsp. Garlic Powder
1 Can Cream Style Corn
1/3 Cup Oil
Combine Cornmeal, Soda, Salt and Sugar, stir in remaining ingredients. Spoon into hot greased 10 inch cast iron skillet or bake in a 10x13 cake pan. Bake at 350 degrees for 45 min. or until golden brown.
