I seriously cannot wait to start grilling hamburger and hot dogs out on the grill and dinning out on our patio. Spring and summer are a great time of year at my house and I adore the out of doors, until those big BUGS come out that eat you alive. =) So when you have the MEAT figured out for supper...there is always the questions...what are you putting with it! For me a great Green Salad is always a winner, but sometimes you just want to mix it up a bit. This recipe is fantastic and is a kid pleasure as well!!
Cottage Cheese Salad
1 Cup Cottage Cheese, Small Curd
1 pkg. Orange Jello (3oz.)
1 can Mandarin Oranges, Drained
1 Cup Unsweetened crushed Pineapple, Drained
1/2 Cup Chopped Pecans
1 Small Tub Cool Whip
In a med. bowl combine cottage cheese, and jello powder. Mix well! Stir in pineapple, oranges, and pecans. Just before serving, fold in whipped topping. Serves about 8!
