Creamy Tortellini Soup


For all the soup lovers out there just like myself ... give this a try. It was a little different, but very tasty. If you don't love the big chunks of tomatoes, a quick pulse in the NINJA will take care of it. The flavor of this soup is fantastic. I think you will love it, just like I did. 


Creamy Tortellini Soup

1 lb. Sausage, browned
2 Pkg. Three-Cheese tortellini, frozen 
48 oz. Chicken Broth
3 Large Cans Diced Tomatoes – Italian seasoned
8 oz. Cream Cheese
Grated Parmesan (for Garnish)

In a Large Crock pot combine, broth, tomatoes, browned sausage, and bring to a boil. Toss in tortellini and cook until desired tenderness is achieved. Add cream cheese about 45 minutes before you are going to be ready to serve it. You may need to add more liquid if the soup has boiled hard.  Make sure to stir quite often. Garnish with Grated Parmesan. ENJOY!
