Syrup for Canning Peaches

I love peaches and it is so wonderful to open up a jar of peaches in the middle of winter. Our local fruit stand is wonderful and get in the best peaches and so each year I make several jars of canned peaches! Depending on your taste you have the option of making the syrup thin to very thick. (sweet - very sweet) I know that canning is not for everyone, but after you do it a time or two it gets in your blood. At least that has been my experience!

Peach Syrup

~ Thin Syrup
1 Cup Sugar
3 Cups Water

~ Medium Syrup
1 Cup Sugar
2 Cup Water

~ Heavy Syrup
1 Cup Sugar
1 Cup Water

Combine Water and Sugar and boil for 5 Min. Double this recipe as needed per amount of peaches you are canning. I recommend the Med. to Heavy Syrup especially if you do not have really ripe peaches.
