I grew up on this. A feel good meal that doesn't take much to prepare, and is made with things that you can find in my house at any time. This may not be featured in Gourmet Magazine, but really who wants to eat raw fish everyday. LOL!
Hearty Winter Casserole
1 Lb. Ground Beef, Browned
5 Med. Raw Potatoes - Peeled and Sliced
1 Can Kidney Beans
1 Med. Onion - Sliced
3 Med. Carrots - Peeled and Sliced
1 Can Tomato Soup
Dash of Salt and Pepper
Dot with Butter
Pour ground beef into a glass baking dish and stir in beans. Cover with a thick layer of sliced potatoes, followed by carrots, and then onions. Sprinkle each layer with salt and pepper. Pour the can of Tomato soup over the top and dot with butter. Bake covered for 1 hour or longer until desired tenderness is reached in a 350 degree oven.
