Lemon Crumb Bars



It is another beautiful Winter day here and so my mind is drifting to baking, I love to bake! These bars are so easy and yummy...and I love lemon so they are a perfect match!

Lemon Crumb Bars

1 Pkg. Lemon Cake Mix
1/2 Cup. Butter, Softened
1 Egg
3 Egg Yolks
2 Cups Saltine Crackers, Finely Crushed
1 Can Sweetened Condensed Milk
1/2 Cup Lemon Juice

In Large bowl, Beat cake mix, butter, and 1 Egg with mixer until Crumbly. Stir in saltine crumbs. Reserving 2 Cups crumb mixture, press remaining crumbs on bottom of greased 9X13 pan. Bake 20 min. at 350 degrees. With mixer, beat egg yolks, sweetened condensed milk and lemon juice. Spread over prepared crust. Top with reserved crumb mixture. Bake 25 in. or until set. Cool. Cut into bars. Store into Refrigerator.
