Fruit Soup
Christmas Day, awh yes! On one of my very favorite days of the year. Fruit Soup is a long held family tradition for our family, and a treat that most us look forward to each Christmas. It is a Norwegian Sweet Soup sometimes called (Sot Suppe). My grand parents came from that region and brought this tradition with them. We have always ate this over glorified rice or sweet rice. This recipe does make an amount for a large crowd so feel free to cut it down a bit. It is so delicious, just try it.
Fruit Soup
1 lb. Raisins
1 lb. Prunes
1 Qt. Cherries or Plums (Peaches or any type of fruit)
3/4 C. Minute Tapioca (or Pearl Tapioca)
2 C. Sugar
2 Qts. Water
In a large pot, cook raisins, prunes and sugar in water for a long time. The last half hour, add the tapioca and cherries/plums. Spoon this soup over Glorified Rice or Sweet Rice. It may be eaten hot or cold. ENJOY!
Glorified Rice
2 C. White Rice
1 C. Sugar
1 Tub Cool Whip
Dash of Salt
Cinnamon to taste
After making rice according to the package, stir in sugar and cool whip. Add a dash of salt and sprinkle with cinnamon. Cool.
