This recipe reminds me so much of my childhood. I grew up poor and this was something of a treat to us and we didn't bother even waiting for them to get cool and set up. We would all get us a cup and eat it hot. To this day I will save some back and eat it that way....It just is too good to wait.
No Bake Cookies
2 Cup Sugar
1/2 Cup Butter
3 Cups Oatmeal
4 Tbsp. Cocoa
1/2 Cup Milk
1/2 Cup Peanut Butter
1 Tsp. Vanilla
Bring the sugar, milk, butter and cocoa to a boil in a medium saucepan over medium heat, stirring occasionally, then let boil for 1 minute. Remove from the heat. Add the oats, peanut butter, vanilla and salt, and stir to combine. Drop teaspoonfuls of the mixture onto the prepared baking sheet, and let sit at room temperature until cooled and hardened, about 30 minutes. Refrigerate in an airtight container for up to 3 days. ENJOY!
