Tuscan chicken chili

I am always looking for a new soup especially when the temperatures drop and the crisp cool winds blow autumn in to being. Sometimes when you can't find the exact thing you are looking for, you have to come up with it yourself. That is exactly how this came about. I hope you try it and like it as much as we do.

Tuscan Chicken Chili

3 chicken breasts, cooked and shredded
2 large cans chicken Broth
4 can Northern Beans
1 tsp. Cumin
1 tsp. Oregano
1 small onion chopped fine
1 tsp. Garlic Powder
1 tsp. Parsley
1/2 Bag frozen Spinach
1 can Rotel

In a large stew pot, boil chicken breasts in broth and remove when fully cooked. Set aside to cool. Add, spices, beans, rotel and spinach to stock pot and bring back to a boil. Add shredded chicken and turn to simmer and allow to simmer for a hour or more. Serve with cornbread or French Bread. Enjoy!
