Chicken Cordon Blue

Chances are that if you come to my house and ask either of my older children what their favorite meal is, they will respond by shouting.....CHICKEN CORDON BLUE! I am not sure when this "addiction" as they have called it started, but it is absolutely darling. You would think that at age 5 and 7 they would scream for Pizza and Ice cream.....Nope, not at this house. We hear squeals over the above stated and Broccoli. This completely goes with out saying, but I just LOVE my babies to death!

Chicken Cordon Blue

4 Chicken Breasts, Trimmed
1/2 lb. Swiss Cheese, Sliced on #2 (We use Baby Swiss, just like the flavor a bit better)
1/2  lb. Ham, Sliced thinly #1 at your deli
3 Eggs

Coating: (or Shake and Bake for Chicken works great too)
3 Cups Unseasoned Cornflake Crumbs
1 Tbls. Garlic Powder
1/2 Tsp. Salt
1/2 Tsp. Pepper
3/4 Cup Finely Shredded Parmesan Cheese


Trim Chicken Breast and slice pocket into the center of the breast. You need a tooth pick to seal up the one end.  After washing your hands well place one slice of thin ham on a place and one slice of #2 cut Baby Swiss Cheese (what we like best) and roll into a small roll up. If you are working with large breast you will need more than one to place inside the pocket.   In medium Bowl whisk eggs and set aside. In another Bowl Mix all coating ingredients together and  prepare  a shallow glass baking dish. In assembly line fashion, pat chicken dry with a paper towel and coat Stuffed Chicken Breast with egg and thin cover in the coating mix. Depending on if you like a little more crunch on the outside repeat this process again. Place in baking dish and bake at 350 degrees until internal temperature reaches 160 degrees.  Take out of oven and let rest for a few min, but do not let them get cool, they are much better when the cheese is all melty  (is that a word?).  AH, Yes...GOOD STUFF!!
