Tilapia

Eating healthy doesn't mean you have to settle for anything less than "Tasty"! I guess that you could call this a double feature recipe, because I am going to share with you my 2 favorite ways to make Tilapia. Both of these recipes go nicely with some butter rice, and a side of either Peas or Broccoli. Nothing extra special in that, but you know...that at my house we like to spice it up a bit most of the time..so every once in a while you have to go bland! =)

Baked Tilapia

4 Frozen Tilapia Fillets - Thawed
1 1/4 Cup Bread Crumbs
1/2 Cup Parmesan Cheese
1 Tsp. Garlic Salt
1 Tsp. Oregano

Coat Fish fillets in Crumb mixture well and place in a glass baking dish that has been pre-sprayed with cooking spray. Bake at 450 degrees for 8-12 min. and ENJOY!

Pan Fried Tilapia

1 Tbsp. Oil
4 Frozen Tilapia Fillets - Thawed
Bayou Boudin and Cracklin Seasoning.(warning...a little dusting is all you want)

Pour oil into hot skillet and place fish into the skillet. Sprinkle seasoning over the top and cook flipping to get cooked though. *If you cannot find this seasoning..any Cajun seasoning will do. Best if ate warm and they do get done very quickly. Don't get easier than that!!!

(If you would like to try your hand at making your own Cajun seasoning here is what you need. Salt, Red Pepper, Garlic, Paprika, Black Pepper, and White Pepper)
