Lemon Tea Cakes

Little bits sized cakes are so cute and dainty and perfect for a ladies tea, or well at my house a jewelry party. I love LEMON anything. They were easy to make, but you must be very careful with how much you put in the mini muffin pan. This recipe is a mix between several that I have found on the internet.

Lemon Tea Cakes

1 Lemon, or Yellow Cake mix
1 Pkg. Instant Lemon Pudding Mix
4 Eggs
1/4 Cup Water
3/4 Cup Veg. Oil

Mix together in mixer and beat at high speed for several min. Mixture will be very thick. Grease Mini Muffin tin very well! Using a teaspoon fill min. Muffin 1/2 full. Bake at 350 degree's for 12 min. Take cakes out the oven and let rest for a few min. pop out of pan and let cool the rest of the way. Will make several pans full! Timing is the trick to this recipe. You must get them out of the oven as soon as they are done...do not over bake! The Glaze recipe is below! Fully immerse the cakes and let drip dry on a cooling rack. These little cakes must be kept in a tightly sealed container and served the following day for best flavor. ENJOY!

Lemon Glaze
1 Bag Powdered Sugar
1/3 Cup Fresh Squeezed Lemon Juice
1 Tbsp. Oil

Mix together with electric mixer. I would run the sugar through a sifter before mixing this up to take care of any lumps.
