Jalapeño Popper Casserole

Having a great neighborhood with wonderful neighbors is priceless. As my kids were growing up, we had a neighborhood that was the one ypu could send your kid across the street to grab a stick of butter, egg or whatever you forgot at the store. Every once in a while, they woukd just randomly show up with a great new recipe that they wanted us to try. This was a home run. Thanks Amanda for the recipe and being a great neighbor. 

Jalapeño Popper Casserole 

2 8oz. Pkg Cream Cheese, softened

1 C. Sour Cream

2 C. Mexican Cheddar Cheese, divided

1 lb. Bacon, cooked and crumbled

6-8 Jalapeños, de-seeded and chopped

1 2lb bag Tator Tots

Green onions for garnish. 

In a 9x13 backing dish, line the bottow with Tator tots, bake for 15 minutes in a 425 degree over. 

While the tots are baking combine Cream cheese, sour cream, 1 cup of cheese Jalapeños and crumbeled bacon into a mixture. 

Remove tots from over and spread mixture over the top of the tots and use remaining cup of cheese for topping. 

Place back in the oven for 20 minutes and bakr until cheese is golden. Top with green onions and Enjoy.
