Parmesan Roasted Red Potatoes - 10 Minute Version

SO EASY - SO GOOD!! Not much to say about these little spuds other than it just might become your go to side that goes with everything. On this particular night we were having a Frisco Melt Style Hamburger, but I have made these with just about anything. My  kids love them, my hubby loves them...I love them! Forget about leftovers. There won't be any! I promise! Ten Minutes, that is all it takes to make these little bit of goodness.. Now that is my kind of recipe.

Parmesan Roasted Red Potatoes (10 Minute Version)

5-6 Red Potatoes, Washed & Cubed
1 T. Oil
1/4 C. Parmesan Cheese
2 T. Parsley
2 Tsp. Routisseri Chicken Seasoning

*Yes, we should by stock in Parmesan Cheese Companies. We buy it in bulk! LOL!

In am Microwave Safe Bowl Combine the Oil and Potatoes that have been washed and cubed. Microwave on high for 5 minutes and stir. Depending on how hot your microwave  is...it may take a bit longer to cook them then what it does in mine. After a quick toss, microwave again for 5 Minutes and or until they have reached the desired tenderness. Drizzle with a additional bit of Olive oil and add seasoning. Toss together and serve. SAVOR!!
